The concept reminds of Cuban "restaurants" in a way, where places open up temporarily and then shutter. In this case, one night only with a very limited schedule. Like indoor farm dinners? Not sure, but can't wait to find out. I think if I were visiting Denver, or planning a trip here, it's the kind of thing that would make me feel like an insider.
